Eggs in Hell

Ingredients

4 tbs. olive oil

1 garlic clove

1 onion, minced

4 cups tomato sauce

1/2 tsp. dried thyme

1/2 tsp. dried basil

1 tsp. fresh minced parsley

8 eggs

Salt and black pepper to season

8 slices toasted and buttered French bread

Directions

Slice the garlic in half. Run a toothpick through each garlic half. In a large skillet over low heat, add the olive oil and garlic. Cook until the garlic browns. Add the onion and simmer for 10 minutes or until the onion is golden brown. Remove the garlic from the oil and discard. Stir in the tomato sauce, thyme, basil and parsley. Stir frequently and cook for 10 minutes.

Break the eggs, one at a time, on top of the tomato sauce. Spoon the tomato sauce over the eggs. Season the eggs to taste with salt and black pepper. Place a lid on the skillet and cook for 5-6 minutes or until the eggs are done. Remove the skillet from the heat.

Place the French bread on a serving platter. Remove the eggs, without breaking them, from the skillet and place on the bread. Spoon the sauce over the eggs and bread to serve.
